One Pan-Roasted Garlic Shrimp and Asparagus
Easy one pan meal! Substitute any lean protein in place of shrimp or veggie in place of asparagus.

MATERIALS
- 1 Pound Medium asparagus with ends trimmed
- 2 Tbsp Grape seed oil
- 1 1/2 Pound Shrimp
- 2-3 Cloves Garlic
- 1/4 tsp Pepper
- 1/8 -1/4 tsp Red pepper flakes
- 3 Tbsp Parsley
- 1 1/2 Tbsp Lemon juice
- 1 Tbsp Grass fed butter
INSTRUCTIONS
- Preheat oven to 400 degrees.
- Line a sheet pan with with foil and lightly spray with cooking spray.
- Add asparagus and drizzle with 1 tbsp grape seed oil.
- Add one minced garlic clove, salt, and pepper.
- Toss until evenly coated, then line asparagus in a single layer.
- Roast 4-6 minutes depending on thickness.
- Meanwhile, remove tail from shrimp.
- Remove pan from oven and push asparagus to one side while keeping in a single layer.
- Add shrimp and drizzle and drizzle with 1 tbsp oil, garlic, red pepper flakes, and salt and pepper.
- Toss until evenly coated and line shrimp in a single layer Roast shrimp 6 minutes or until opaque Remove from oven and drizzle with lemon juice.
