One Pan-Roasted Garlic Shrimp and Asparagus

Easy one pan meal! Substitute any lean protein in place of shrimp or veggie in place of asparagus.

MATERIALS

  • 1 Pound Medium asparagus with ends trimmed
  • 2 Tbsp Grape seed oil
  • 1 1/2 Pound Shrimp
  • 2-3 Cloves Garlic
  • 1/4 tsp Pepper
  • 1/8 -1/4 tsp Red pepper flakes
  • 3 Tbsp Parsley
  • 1 1/2 Tbsp Lemon juice
  • 1 Tbsp Grass fed butter

INSTRUCTIONS

  • Preheat oven to 400 degrees.
  • Line a sheet pan with with foil and lightly spray with cooking spray.
  • Add asparagus and drizzle with 1 tbsp grape seed oil.
  • Add one minced garlic clove, salt, and pepper.
  • Toss until evenly coated, then line asparagus in a single layer.
  • Roast 4-6 minutes depending on thickness.
  • Meanwhile, remove tail from shrimp.
  • Remove pan from oven and push asparagus to one side while keeping in a single layer.
  • Add shrimp and drizzle and drizzle with 1 tbsp oil, garlic, red pepper flakes, and salt and pepper.
  • Toss until evenly coated and line shrimp in a single layer Roast shrimp 6 minutes or until opaque Remove from oven and drizzle with lemon juice.
